Pienza

trip-to-italyPienza is a delightful village which was almost completely redesigned by Pope Pius II in 1459. Pope Pius II was born in Pienza and he had a strong desire to transform the look of his birthplace. He chose the architect Bernardo Rossellino to carry out his dream. The square known as Piazza Pio II and the buildings around it, the Piccolomini Palace, the Borgia Palace and the cathedral with its pure Renaissance exterior and an interior in the late Gothic style are all architectural wonders.

You can sample the king of all sheep cheeses, Pienza's own pecorino or cacio. You can sample the pecorino in many forms: fresco (fresh), semistagionato (partially aged), or stagionato (aged and suitable for grating).

Many pecorini rounds are also dusted with materials to keep them soft and to alter the taste a bit. The most popular are cenerato or sottocenere, which is an ash coating that's mainly use to soften the cheese. Peperocinato (hot peppers) and tartufato (truffles) are among the favorites.

In Pienza, you can judge the perfect cheese that tops your list. Pecorino tasting is even more popular than wine tasting in Pienza. Be sure to have some served in the traditional way, with a side of local honey!
